My favorite would have to be Ceylon tea. If I can't get a hold of some Ceylon tea, then I might settle for some Darjeeling or Assam tea.
Hot tea with hot spicy food is a killer combination, that's if you like the way it burns your mouth :)

Assam, no doubt. I love it's rich, full flavour.
That being said, I do also really enjoy green teas and jasmine tea. Depends on my mood.
Anything but Earl Grey (or other teas with bergamot in them) - they just make me think I'm drinking my grandmother, and that's just plain wrong.

After more than 30 years of drinking tea, I've basically settled on Rooibos, the best tea on the planet. :)

I'm not a huge tea drinker, but my favorite has been this flavor called Lemon Zinger from Celestial Seasonings

I'm a huge fan of Peet's Assam Golden Tip -- great with milk and sugar, if you're a sugar person, that is.

For herbal teas, both Roobios and Celestial Seasonings (Wild Berry Zinger and Lemon Zinger) are good. For black tea, I like any Earl Grey, English Breakfast, or Irish Breakfast.

followed closely by a basic Rooibos, but that's not techincally tea I don't think.
